Thin Pancakes with Milk Recipe

The recipe for thin pancakes with milk becomes especially relevant on the eve of Maslenitsa, when delicious pancakes should be the main component of the festive table. There are different ways to prepare pancakes: with milk, with kefir, with sour milk and even with plain water. However, the most delicious are pancakes cooked with milk. Their unforgettable taste and aroma will not leave anyone indifferent. This article will tell you how to prepare this delicious delicacy.

To prepare delicious thin pancakes you will need the following ingredients:

  • milk – 0.5 l;
  • eggs – 3 pcs;
  • wheat flour – 1.5 cups;
  • sugar – 2 tbsp. spoons;
  • salt – 0.5 teaspoon;
  • vegetable oil – 2 tbsp. spoons

Features of dough preparation

Break the eggs into a container and beat. Add 200 ml of milk, sugar and salt to them. Mix everything thoroughly. Pour the sifted flour into the resulting mass and mix everything with a mixer. Gradually add the remaining milk, stirring continuously. It is very important that there are no lumps in the dough.

The consistency of the dough should be similar to very heavy cream or liquid sour cream, but not like water. If you get a liquid dough, then you need to add flour to it, and if it’s thick, add milk. In order to add flour to the dough, you must first separate part of the dough, add a few tablespoons of flour, mix everything thoroughly and mix with the rest of the dough.

When you have the required consistency of the dough, you need to add a couple of tablespoons of butter (vegetable or melted butter) and move everything thoroughly. This will not affect the taste of the pancakes in any way, but is necessary to ensure that the pancakes do not stick to the pan while frying.

The dough is ready, which means it’s time to fry thin, delicious pancakes in milk in a frying pan.

Frying pancakes in a frying pan

To do this, you need to take a frying pan (it is important that it has a handle), heat it well, grease it with a small piece of lard or butter, or sprinkle it with a little vegetable oil. Using a ladle, pour the dough onto an inclined frying pan. In this case, it is important to rotate the pan in a circle, this is the only way to achieve even distribution of the dough throughout the pan. Considering that the pan is very hot and the dough sticks to it literally instantly, this should be done very quickly.

You need to fry the pancakes on both sides until they acquire a golden crust. Interestingly, the second side cooks much faster than the first. If the pancakes tear, this indicates that you need to add a little more flour to the dough. If the pancakes turn out thick, the dough sticks and thickens, this means that you need to add milk to the dough.

You can turn the pancakes using a special spatula, fork or a non-sharp knife. To do this, you need to carefully pry the pancake and sharply turn it over. It is very convenient to do this by throwing the pancake into the air. But this method requires a little skill.

The finished pancakes are stacked on a plate. To remove a pancake from a frying pan, most often, you just need to turn it over, and then the pancake itself will jump onto the plate.

Thin pancakes with milk are served hot; it is in this state that they are the most appetizing and delicious. You can eat them with jam, preserves, honey or sour cream. In addition, you can prepare a filling for them from meat, liver, cottage cheese, chicken and cheese or red caviar.

As you can see, the recipe for thin pancakes with milk is very simple and does not require special culinary knowledge, and therefore every housewife can make this delicious delicacy.
